Ethiopia Guji: The Origin
This lot comes from Guji, in southern Ethiopia — a region whose name is globally synonymous with the finest classics in fruit-forward, aromatic coffee. Grown at altitudes between 1,900 and 2,200 masl, the harsh mountain environment slows cherry growth, giving the seed enough time to develop complex sugar compounds and a clean, vibrant acidity.
The Process: Natural
Ethiopia Guji goes through traditional natural processing — the whole cherry is dried intact in the sun, skin on, with no washing or pulping. This lets natural sugars gradually work their way into the bean during drying, building the fruit-forward sweetness and chocolate depth that define this cup specifically, while keeping a balanced structure where sweetness never overwhelms clarity.
Cup Notes
The cup opens with ripe plum sweetness, followed by a chocolate layer that adds depth and light weight, then a touch of lemon zest that cuts the sweetness with a light lift, closing on coffee blossom aromatics that give the cup a refined floral dimension. Medium body, with a lively medium acidity that keeps the cup balanced start to finish. This lot scored 84.5 on the SCA scale.
Roast Approach
Roasted medium, deliberately, to bring out the fruit-forward sweetness and chocolate depth built by the natural process, without letting a darker roast bury them under heavier classic flavors.
Ethiopia Guji shines in filter brewing (V60), where the cup gets enough time to reveal all four layers clearly.
