Colombia Finca – Anaerobic (SCA 86.5)

Colombia stands as a global titan in specialty coffee diversity, driven by its unique geography across three distinct ranges of the Andes Mountains. Within microscopic distances, dramatic shifts in altitude, soil composition, and temperature profiles create highly localized micro-climates. The Colombia Finca lot is harvested at a staggering 1,800 MASL. This high-altitude micro-climate experiences a pronounced diurnal temperature swing—chilly alpine nights contrasted by warm, sun-drenched days. This massive thermal variance slows down cherry maturation, forcing the coffee tree to concentrate complex organic acids and sugars inside the seed.

The variety here is Castillo, a Colombian cultivar developed locally for stronger disease resistance without sacrificing cup quality — a common choice on farms balancing yield and quality at the same time.

The Process: Controlled Anaerobic Fermentation

The depth and complexity of this coffee are unlocked entirely through precise biochemical control. Following harvest, the perfectly ripe cherries are sealed inside completely oxygen-free, anaerobic fermentation tanks. By strictly controlling temperature and pH levels, the microbial activity is decelerated. This extended, oxygen-deprived environment forces the coffee sugars to ferment deeply, driving complex aromatic compounds into the core of the bean. This meticulous process elevates the Castillo lot far beyond the flavor profiles of traditional washed coffees, yielding an incredibly expressive fruit density and a velvety, luxurious body.

Cup Notes

A complex, highly structured cup that opens with an immediate, tropical sweetness of red guava. As it develops, a crisp, well-defined blueberry acidity cuts through the sweetness, imparting a refreshing brightness that keeps the cup nimble. The experience rounds out with a silky, comforting finish of creamy vanilla. Sitting at a verified SCA score of 86.5, this lot is an immaculate display of structural harmony between intense natural sweetness and flavor definition.
