Yirgacheffe needs no introduction to specialty coffee drinkers — it’s the origin the rest of Ethiopian coffee gets measured against. But Chelchele specifically sits at close to 2,200 masl, where the relative cold slows cherry ripening and gives it more time to build natural sugars — and that’s exactly what shows up in the cup.
Chelchele Wine skips both traditional washed and dry processing. Instead, it goes through anaerobic fermentation in sealed stainless steel tanks for 4 to 5 days. With oxygen completely removed, the bean pulls sugars and juices directly from the cherry pulp before moving to a slow sun-drying process that stretches over roughly two weeks. The result is a heavier body and more complexity than either traditional method produces on its own.
Chelchele Wine performs best in brew methods that give it enough time to unfold its flavor layers — filter/V60 or French press.
